Poor Boy Chicken - cooking recipe

Ingredients
    1 1/2 lb. lean streak, salt meat (heavy lean streak)
    white meal, as desired
    black pepper to taste
    1/4 c. cooking oil
Preparation
    Wash
    meat in cold water to remove salt. Slice 1/4-inch thick, or thicker if desired.
    Soak in cold water over night. Mix
    white meal
    and\tblack pepper, sufficient amount to meal down
    the meat.
    Pat meal into the meat.
    Put meat in skillet on
    medium fire with the cooking oil.\tLet this fry until dark golden brown, turning from side to side two or three times.
