Bacon Potato Puff - cooking recipe

Ingredients
    1/2 lb. sliced bacon, diced
    4 eggs, separated
    1/4 c. onion, finely chopped
    1/2 tsp. ground mustard
    1/8 tsp. pepper
    2 c. warmed mashed potatoes, prepared with milk and butter
    1/2 c. Cheddar cheese, shredded
    1/4 c. parsley (fresh), minced
Preparation
    Cook bacon until crisp. Drain on paper towels. In a mixing bowl, beat egg yolks until light. Beat in onion, mustard and pepper. Place potatoes in a bowl. Fold in egg mixture. Set aside 2 tablespoons bacon. Fold in cheese, parsley and remaining bacon into potatoes.
