Fresh Carrot Cake - cooking recipe

Ingredients
    1 1/2 c. flour
    1 c. sugar
    1 tsp. baking soda
    1 tsp. ground cinnamon
    1/4 tsp. salt
    1 c. shredded carrots
    1 Tbsp. lemon juice
    3/4 c. water
    1/3 c. vegetable oil
    1 tsp. vanilla
    1/2 c. chopped walnuts (optional)
Preparation
    Combine first 5 ingredients in an ungreased 8 or 9-inch square pan.
    Mix well.
    Add carrots until blended.
    Add remaining ingredients.
    Stir until blended.
    Scrape pan clean.
    Sprinkle with nuts, if desired.
    Bake at 350\u00b0 for 25 to 30 minutes, until done.
    Cool in pan on rack.
    Cut into squares.
