Monte'S Cheese Soup - cooking recipe
Ingredients

1/2 c. finely diced onions
1/2 c. finely diced carrots
1/2 c. finely diced celery
1/4 c. melted butter
1/4 c. flour
1 Tbsp. cornstarch
4 c. milk
4 c. chicken broth
1/8 tsp. baking soda
1 lb. American cheese, cubed
Preparation

Saute onions, carrots and celery in butter in a large pan for 5 minutes or until tender.
Add flour and cornstarch, stirring until smooth. Cook 1 minute, stirring constantly.
Gradually add milk and chicken broth. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in soda and cheese. Reduce to low heat and cook until cheese melts.
Makes 2 quarts.
