Steak A La Creole - cooking recipe

Ingredients
    2 lb. round steak
    salt and pepper
    2 Tbsp. Crisco
    2 Tbsp. flour
    1 large onion, chopped
    1 green pepper, chopped
    1 c. water
    2 c. tomatoes
    1 clove garlic, mashed
    1 bay leaf
    1/2 tsp. dried thyme
    1/4 c. parsley
Preparation
    Salt and pepper the meat.
    In an iron skillet, brown the meat in shortening.
    Remove and set aside.
    Make a roux by browning flour along with onion and green pepper in the fat remaining in the skillet.
    Add water, tomatoes and seasonings.
    Allow to simmer for about 30 minutes.
    Return meat to gravy and cook until tender. Serve over rice.
    Makes 6 servings.
