Classy Potatoes - cooking recipe

2 c. shredded reduced-fat sharp Cheddar cheese
1 can 99% fat-free cream of chicken soup
1 c. fat-free sour cream
1/2 c. evaporated skim milk
6 medium potatoes (2 lb.), peeled
2 c. corn flakes
1/2 c. finely chopped onions
Preparation

Preheat the oven to 350\u00b0.
In large bowl, stir together the cheese, sour, sour cream, milk and onions.
Set the soup mixture aside.
Crush corn flakes into coarse crumbs.
Coarsely shred the potatoes.
Immediately stir the potatoes into the soup mixture to prevent browning.
Spray oblong pan with no-stick spray. Transfer the potato mixture to the baking dish.
Top with corn flakes.
Bake 1 hour or until the potatoes are tender.
