Old-Fashioned Lemon Cheese Cake - cooking recipe

Ingredients
    4 egg whites
    2/3 c. shortening
    1 1/2 c. sugar
    1 tsp. vanilla extract
    2 1/2 c. all-purpose flour
    3 tsp. baking powder
    1/4 tsp. salt
    1 c. ice water
Preparation
    Preheat oven to 350 degrees. Grease and lightly flour the bottoms of two 9-inch cake pans.
    Beat the egg whites until stiff but not dry. In large bowl, combine shortening, sugar and vanilla. Beat until well mixed. In another bowl, combine flour, baking powder and salt.
    Stir to mix.
    Add to the creamed mixture alternately with the ice water.
    Fold in the beaten egg whites. Spoon into prepared pans. Bake about 18 to 20 minutes or until a toothpick comes out clean when inserted into center of each layer. Remove from pans and cool completely on a rack.
    Spread with Lemon Cheese Icing.
