Roast 'Coon - cooking recipe
Ingredients

1 dressed young coon
2 stalks celery
2 Tbsp. salt
1/4 tsp. red pepper
2 medium onions
1 carrot
1 tsp. black pepper
1 c. water
1 Tbsp. baking soda
Preparation

Chill coon thoroughly.
Remove all fat and scent glands.
Rub soda well into skin.
Rinse thoroughly inside and out.
Place in deep roasting pan and barely cover with warm water.
Add onions, celery and carrot.
Cover and simmer gently 1/2 hour.
Remove coon.
Place coon on back in a roasting pan with tight lid.
Add the water and roast at 350\u00b0 until tender (about 2 hours).
Remove cover; add more water if needed and roast, uncovered, to a rich brown.
Serve with dressing and gravy.
