Sweet Potato Cake - cooking recipe
Ingredients

1 c. butter (2 sticks)
2 c. sugar
4 eggs
2 1/2 c. mashed, cooked sweet potatoes
3 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. soda
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. each: chopped nuts and flaked coconut
Preparation

Cream butter thoroughly with sugar until light and fluffy; beat in eggs, one at a time, beating well after each addition.
Add mashed potatoes, vanilla and spices; blend well.
Sift flour, salt, baking powder and soda.
Add to potato mixture, blending and mixing thoroughly.
Fold in nuts and coconut.
Turn into greased and lightly floured 10-inch tube cake pan.
Bake at 325\u00b0 for 1 hour and 15 minutes.
