Stuffed Zucchini Boats - cooking recipe
Ingredients

8 (4 to 5-inch) zucchini
4 slices bacon, finely diced
1 large clove garlic, minced
1 (10 oz.) pkg. frozen chopped spinach, thawed and patted dry
1/4 c. grated Parmesan cheese
1 to 2 Tbsp. fine bread crumbs
1/4 tsp. black pepper
Preparation

Cut zucchini in half lengthwise, leaving the ends trimmed but intact. Using a spoon (grapefruit spoon works well!), scoop out insides to form boats, keeping all zucchini \"meat\"; set aside.
