Hommos Bi Tahina (Chickpea Paste)(Lebanese; International) - cooking recipe

Ingredients
    5 oz. chickpeas (garbanzo)
    1 large clove garlic salt
    4 to 6 Tbsp. tahini (pureed sesame; found in Greek and specialty shops)
    5 to 6 Tbsp. lemon juice
    little oil
    chopped parsley and paprika (to garnish)
Preparation
    Soak chickpeas in cold water overnight.
    Drain, cover with fresh water and boil for about 1 1/2 hours.
    Crush garlic with 1/4 teaspoon salt.
    Put the tahini, lemon juice and garlic into the liquidiser goblet; add chickpeas and blend to a creamy paste.
    Turn out, add more lemon juice and salt to taste.
    (It should be slightly sharp.)
    If you wish, add olive oil to give a softer texture.
    If you have no liquidiser, rub peas through a sieve, then beat in the garlic.
    Add the tahini gradually, then lemon juice and seasoning.
    Turn into bowl and garnish.
    Serves 6 to 8.
