Stir-Fry Meal In One - cooking recipe

Ingredients
    4 slices bacon, diced
    1/2 c. chopped onions
    2 whole chicken breasts (about 1 1/2 lb.), skinned, boned and cut into thin strips
    1 (4 oz.) can sliced mushrooms, drained
    1 c. cooked green peas
    3 c. cooked rice
    1/4 c. diced pimentos
    2 tsp. salt
    1 tsp. seasoned pepper
    chicken broth
Preparation
    Cook rice in chicken broth.
    Drain broth.
    In a large skillet, cook bacon and onions until transparent.
    Add chicken and continue cooking about 5 minutes.
    Stir in mushrooms, peas and pimentos. Add seasonings.
    Add rice, stirring until well mixed. Heat thoroughly.
    Makes 6 servings.
