North Carolina Yam Muffins - cooking recipe

Ingredients
    1 c. yams, mashed
    1 to 2 c. sugar (I use 1 1/2 c.)
    1 c. oil
    4 beaten eggs
    3 c. self-rising flour
    1 c. raisins
    1 c. pecans, broken
Preparation
    Combine yams, sugar, oil and eggs.
    Add flour and blend until just moistened.
    Fold in raisins and nuts.
    Spoon batter into greased muffin tins.
    Bake 15 to 20 minutes at 350\u00b0.
    Batter may be refrigerated and used as needed.
    Makes 24 muffins.
