Culpeper Tomato Relish - cooking recipe

Ingredients
    1 peck ripe tomatoes
    6 medium onions
    6 sweet peppers
    6 hot peppers
    1 c. salt
    1 oz. celery seed
    1 oz. mustard seed
    1 qt. vinegar
    5 c. brown or white sugar
Preparation
    Peel tomatoes and cut coarsely.
    Add chopped onions and peppers.
    Add salt and mix.
    Let drain in cheesecloth or colander for 3 hours.
    Add other ingredients and mix well.
    Put into jar or crock.
    Stir every day for 3 days.
    Stir well before using.
    This relish will keep for one year, when refrigerated.
