Tabouleh (Tabouli) - cooking recipe
Ingredients

1 c. uncooked bulgur wheat
3 medium tomatoes, chopped
2 Tbsp. fresh or 2 tsp. dried mint
1/3 c. lemon juice
3/4 tsp. salt
2 1/4 oz. can sliced black olives (optional)
2 c. fresh parsley, chopped
5 green onions (with tops), sliced
1/4 c. olive oil
1 c. boiling water
1/4 tsp. pepper
dash of cayenne pepper (optional)
Preparation

In a mixing bowl, pour boiling water over the bulgur wheat. Let sit for 1/2 hour.
Mix remaining ingredients.
Pour over wheat and toss.
Cover and refrigerate at least 1 hour.
Serve over a bed of lettuce.
The salad is best if it is refrigerated several hours before serving.
About 10 servings, 175 calories per serving.
