Ingredients

1 Tbsp gelatin
1/4 cup cold water
1 cup boiling water
2/3 cup sugar
1 tsp grated lemon rind
1/4 cup lemon juice
1/4 tsp salt
2 egg whites
2 cups milk
2 egg yolks
1/4 cup sugar
1/4 tsp salt
1 tsp vanilla
Preparation

Scald milk in top of double boiler.
Beat egg yolks slightly. Add sugar and salt.
Stir into egg mixture several spoons of scalded milk.
Keep water in bottom of double boiler below boiling during rest of cooking time.
Add egg mixture to scalded milk, stirring constantly.
Cook until the custard thickens only enough to coat a metal spoon.
Cool.
Add vanilla.
Store in covered dish in refrigerator until serving.
Pour over individual servings and garnish.
