Mock Caesar Salad - cooking recipe

Ingredients
    1 clove garlic
    1/4 c. water
    1/8 tsp. salt
    1 Tbsp. white wine vinegar
    1/2 tsp. Dijon mustard
    1/4 c. olive oil
    2 c. torn romaine lettuce
    2 Tbsp. freshly grated Parmesan cheese
    2 Tbsp. pine nuts
    1/8 tsp. pepper, freshly ground
Preparation
    Combine garlic and water in a small saucepan.
    Bring to a boil.
    Cover, reduce heat and simmer 10 minutes or until soft; drain.
    Place garlic in a salad bowl; add salt.
    Mash into a paste, using the back of a spoon.
    Stir in vinegar and mustard with a wire whisk.
    Add olive oil in a slow, steady stream, beating with a whisk until blended.
    Add lettuce and gently toss. Sprinkle with cheese, pine nuts and pepper.
