Mexican Black-Eyed Peas - cooking recipe

Ingredients
    1 (1 lb.) pkg. black-eyed peas
    2 lb. bulk pork sausage
    1 onion, chopped
    1 (28 oz.) can tomatoes
    1/2 c. water
    2 Tbsp. sugar
    2 1/2 Tbsp. chili powder
    2 1/2 Tbsp. chopped celery
    1 chopped jalapeno pepper (optional)
Preparation
    Sort, wash and soak peas overnight.
    Brown sausage.
    Add onion; cook until tender.
    Drain.
    Drain peas well; stir in sausage and remaining ingredients.
    Bring to a boil.
    Cover, reduce heat and simmer for 1 1/2 hours.
    Add more water if necessary.
