Ingredients

1/2 cup vinegar
1/2 cup beet juice
2 tablespoons sugar
2 cloves
1/2 teaspoon salt
3 peppercorns
1/4 of a bay leaf
sliced canned or cooked beets (reserve liquid)
sliced green peppers (optional)
sliced purple onions (optional)
whole garlic cloves (optional)
Preparation

Drain sliced beets reserving liquid.
Pack into quart jars adding optional ingredients if desired.
In a saucepan combine vinegar and beet juice.
Bring to a boil then add: sugar, cloves, salt, peppercorns, and bay leaf.
Return to boil until well blended. Pour slightly cooled mixture over beets.
Add more juice to fill jar.
Chill and serve.
