Corn Crab Muffins - cooking recipe
Ingredients

2 c. crabmeat
1 tsp. soda
2 c. buttermilk
2 c. cornmeal
2 tsp. baking powder
1 tsp. seasoned salt
2 eggs, beaten
2 Tbsp. melted shortening
Preparation

Dissolve soda in buttermilk.
Mix and sift together cornmeal, salt and baking powder.
Add to beaten eggs alternately with buttermilk.
Stir in shortening and mix well.
Stir in crabmeat. Pour into greased muffin pans.
Bake at 350\u00b0 for approximately 30 minutes.
Makes 18 muffins.
