Fast And Easy Stir-Fry - cooking recipe
Ingredients

1/4 c. onion
1 chicken breast, cut in pieces
1 pkg. frozen mixed vegetables
1/2 c. Minute rice
1/2 c. chicken broth
1/4 tsp. Italian seasoning
1/2 tsp. fresh or dried parsley
Preparation

Saute 1/4 cup onion in small amount of vegetable oil in frypan or wok.
Add chicken breast, cut in small pieces, and brown on all sides.
Add 1 package of frozen mixed vegetables (Italian or California Blend).
Add 1/2 cup chicken broth.
Add 1/2 cup Minute rice and 1/4 teaspoon of Italian seasoning. Simmer, covered, until vegetables and rice are done (15 to 20 minutes).
Add 1/2 teaspoon fresh or dried parsley just before serving.
Serve with garlic toast.
