Lemon Meringue Pie - cooking recipe
Ingredients

1 1/2 c. sugar
1/3 c. cornstarch
1 1/2 c. water
3 egg yolks
3 Tbsp. butter
1/2 c. lemon juice
1 Tbsp. lemon rind
1 (9-inch) baked pie shell
Preparation

In a large kettle, bring to a boil the sugar, cornstarch and water.
Boil for 1 minute.
Slightly beat the yolks in a medium bowl.
Mix in some of the boiled pudding into the egg yolks; stir constantly.
Put back in kettle and boil for 1 minute.
Add the butter, lemon juice and lemon rind.
Pour in the pie shell.
Top with meringue and bake.
