Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 c. milk
    1 small onion
    1 c. mushroom soup
    1 stick oleo
    1/4 stick oleo
    1 egg
    1 c. grated cheese
    1/4 lb. saltines (crumbs)
Preparation
    Peel eggplant; cut in pieces and cook in water until tender. Drain and mash; add 1/4 stick oleo, milk, egg, onion, cheese and soup.
    Mix well and pour in casserole.
    Mix cracker crumbs and 1 stick oleo.
    Pour over top of casserole.
    Bake for 30 minutes at 350\u00b0 or until bubbles good.
