Ingredients

8 small or 4 large loin pork chops
1/4 c. olive oil
1/4 c. onion, minced
1/4 ??? green onions, minced
2 cloves garlic, minced
1/4 c. bell pepper, minced
1 c. tomatoes, peeled, seeded and chopped
2 Tbsp. Creole mustard or coarse brown mustard
1/4 c. white wine
1 Tbsp. thyme
1 bay leaf
salt and pepper
Preparation

Allow the chops to come to room temperature.
Heat the oil over moderate heat.
Brown the chops on both sides and reduce heat.
Cook slowly until done.
Do not overcook.
Remove chops and set aside.
