Sunshine Salad - cooking recipe
Ingredients

1 (3 oz.) pkg. lemon flavored gelatin
1 c. boiling water
1/2 c. cold water
1/8 tsp. salt
1 can crushed pineapple (with syrup)
1/2 c. carrots, shredded
Preparation

Empty gelatin into small bowl; add boiling water and stir until dissolved.
Add cold water, salt and pineapple.
Chill until mixture is slightly thickened.
Fold into gelatin mixture the shredded carrots.
Pour into 4 cup molds or 1 (8 x 8 x 2-inch) baking pan.
Chill until set.
Serve in the pan or molds.
Can also be cut into squares.
Makes 6 servings.
