Savory Tomato Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    1 c. chopped onion
    1/4 c. finely diced carrot
    2 Tbsp. flour
    1 (14 oz.) can beef bouillon
    1 (28 oz.) can whole peeled tomatoes with juice, crushed
    1/2 tsp. salt
    1/2 tsp. vanilla
    chopped basil or dill weed (optional)
Preparation
    In a 2-quart saucepan, melt butter and cook onion and carrot until soft.
    Stir in flour and cook for 1 minute.
    Slowly stir in the bouillon.
    Add tomatoes, juice and salt.
    Bring to the boil and simmer for 25 to 30 minutes.
    Puree the soup in a processor or with a stick blender for a smooth texture.
    Stir in the vanilla.
    Serve hot with dill weed or basil, if desired.
    Makes 4 to 6 servings.
