Chinese Pepper Steak - cooking recipe

Ingredients
    1 tsp. sugar
    2 Tbsp. soy sauce
    2 Tbsp. white wine
    1 lb. flank steak, cut in thin strips
    2 green peppers, seeded and sliced
    2 tomatoes, cut in small wedges
    2 onions, sliced
    2 cloves garlic, mashed
    salt to taste
    1 slice fresh ginger or 1/2 tsp. powdered ginger
    2 scallions, sliced thin (white parts only)
    2 Tbsp. cornstarch
    1/4 c. cold water
Preparation
    Mix together sugar, soy sauce and wine.
    Marinate strips in mixture for 20 minutes.
    Stir-fry green pepper strips and onions in oil.
    (Salt oil first.)
    Remove from pan but reserve oil.
    Stir-fry garlic, ginger and scallions in reserved oil.
    Add salt to taste and 1 additional tablespoon oil, if needed.
    Add meat and stir-fry a few minutes.
    Return onions and peppers to skillet.
    Add tomato wedges.
