Crab Quiche - cooking recipe
Ingredients

1 small onion, finely chopped
1 1/2 c. sliced fresh mushrooms
2 Tbsp. butter
1 1/2 to 2 c. crabmeat
4 eggs, beaten
6 to 8 oz. shredded Mozzarella cheese
2 green onions including tops, chopped
2 Tbsp. olive oil
splash of dry white wine (1/4 to 1/2 c.)
salt, pepper and Tabasco to taste
1/2 c. heavy cream
Preparation

Saute onion and mushrooms in olive oil and butter until onions are clear and mushrooms are soft.
Add wine and crab meat; season with salt, pepper and Tabasco and simmer for 2 minutes.
Spread evenly over bottom of quiche dish which has been sprayed with Pam. (I use a 10-inch Corning Ware dish.)
Pour beaten eggs, mixed with cream evenly over crab mixture.
Top with Mozzarella.
Bake at 350\u00b0 for 20 to 30 minutes until mixture is firm and cheese browns.
