Vlasta'S Czech Potato Soup - cooking recipe

Ingredients
    1 medium onion, chopped
    2 cloves garlic, minced
    2 to 4 Tbsp. oil (for sauteing)
    2 to 4 Tbsp. flour
    4 chopped, peeled potatoes
    3 to 4 large carrots, chopped
    2 to 3 ribs celery, chopped
    3 plum tomatoes, chopped
    1/4 c. chopped parsley
    salt and pepper to taste
    6 drops Maggi brand seasoning (optional)
Preparation
    Saute onion and garlic in oil until translucent.
    Add the flour.
    Make a roux over low flame.
    Add vegetables and stir, then add 3 1/2 to 4 quarts of cold water.
    Cook for 45 minutes over low to medium heat.
    And the Maggi brand seasoning, if desired. Serve, garnished with chopped parsley.
