Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, peeled and diced
    Cheddar cheese
    salt and pepper
    crushed Ritz crackers
    1 egg, beaten
    milk
Preparation
    Parboil 1 eggplant; cool.
    Butter a shallow baking dish; add a layer of eggplant.
    Dot with pieces of butter, a layer of Cheddar cheese, salt and pepper and a layer of Ritz crackers.
    Repeat layers.
    Beat 1 egg and enough milk to partially cover the eggplant.
    Bake at 350\u00b0 for 1 1/4 hours.
