Cheesy Rotel Crayfish Spaghetti - cooking recipe

Ingredients
    8 to 12 oz. angel hair spaghetti
    1/2 pkg. frozen onion mix
    1 tsp. minced garlic
    1 Tbsp. light margarine
    1/4 lb. light Velveeta, cubed
    1 lb. crayfish tails
    1 can cream mushroom soup
    1 can Ro-Tel tomatoes
    1/2 c. skim evaporated milk
    1 1/2 tsp. lemon juice
    1/4 tsp. red pepper
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    Cook spaghetti, according to package directions and drain. Saute vegetables in margarine until tender-crisp.
    Stir in mushroom soup, tomatoes, skim milk, lemon juice and seasonings.
    Mix well. Add Velveeta and simmer until melted, stirring often.
    Add crayfish and simmer about 10 to 15 minutes.
    Add spaghetti and stir in gently until well blended.
    Serves 6.
