Spicy Coleslaw - cooking recipe

Ingredients
    6 c. shredded cabbage
    1 c. chopped cucumbers
    1 c. chopped tomatoes
    1 c. chopped green pepper
    1 c. sliced green onions
    2/3 c. spicy vegetable juice (V-8)
    1/4 c. red wine vinegar
    2 tsp. sugar
    1 tsp. celery seed
    1/2 tsp. pepper
    1/4 tsp. salt (optional)
Preparation
    In large bowl combine cabbage, cucumber, tomato, green pepper and green onions; set aside.
    In small bowl combine remaining ingredients and mix well.
    Pour over cabbage mixture and toss gently.
    Cover and chill for 2 hours before serving.
    Serves 12.
