Green Tomato Preserve Pie - cooking recipe

Ingredients
    1 lb. (4 small) tomatoes
    4 slices lemon
    small piece ginger
    1 3/4 c. sugar
    3/4 c. water
    1 unbaked 8-inch pie shell
Preparation
    Wash
    firm
    green
    tomatoes;
    skin
    if\tdesired.
    Slice tomatoes 1/4
    inch\tthick.\tTo
    make
    tomatoes
    crispier, soak overnight in lime
    water.
    Boil
    lemon
    slices gently in water for 10 to
    15
    minutes.
    Remove lemons, make syrup with liquid and sugar.
    Add
    tomatoes, ginger and cooked lemon rind.
    Boil rapidly until tomatoes are clear and syrup thick;
    skim.
    Cool quickly and stand
    in
    syrup to plump.\tPlace preserves in pie shell and bake in a 400\u00b0 oven until pastry is firm.
