Pepper Steak - cooking recipe

Ingredients
    3 lb. tenderloin steak, sliced
    3 green peppers, sliced
    3 medium onions, sliced
    9 large mushrooms, sliced or 1 (No. 202) can button mushrooms
    3 tomatoes, quartered or 1 (No. 2 1/2) can tomatoes
    1 1/2 c. Espagnole Sauce
    3/4 c. butter
    1/2 c. flour
    6 Tbsp. red Burgundy
    salt and pepper
Preparation
    First prepare green pepper sauce: Saute green pepper, onions, mushrooms and tomatoes in 1/2 cup butter for 5 minutes.
    Add Espagnole Sauce and simmer 10 minutes.
    Salt and pepper steak slices and dredge in flour.
    Saute in remaining 1/4 cup butter for 2 minutes.
    Add green pepper sauce and simmer 15 minutes.
    Add wine and simmer for 3 minutes.
    Serve piping hot.
