Curry-Tomato Dipping Sauce - cooking recipe
Ingredients

1 can (28 oz.) plum tomatoes in puree
4 tsp. curry powder
2 Tbsp. plus 2 tsp. vegetable oil
1 Tbsp. fresh lemon juice
1 tsp. kosher salt
1 tsp. chopped fresh mint
Preparation

Puree tomatoes and their liquid in blender or food processor until smooth. Measure out 2 cups of the puree and scrape into medium-size bowl.
Reserve remainder for another use.
