Spiced Okra - cooking recipe
Ingredients

2 c. water
1 Tbsp. finely chopped onion
1 clove garlic, finely chopped
1/4 tsp. cayenne pepper
1/4 tsp. white pepper
1/4 tsp. salt (optional)
1/4 lb. fresh cut okra, washed, stemmed and each cut crosswise into 3 pieces
Preparation

Combine water, onion, garlic, cayenne, white pepper and salt. Bring to a boil over high heat.
Add okra and cook briskly, gently stirring occasionally, for about 15 minutes or until almost all of the liquid in the pan has evaporated and okra is tender, but intact.
Take the okra out of pan and put into a colander.
Run cold water over it to set the color and stop the cooking.
