Beef Tenderloin With Brandy Cream - cooking recipe

Ingredients
    4 to 6 oz. filets
    3 Tbsp. shallots
    1/2 c. sliced mushrooms
    2 Tbsp. butter
    1/2 c. brandy
    1/2 c. beef broth
    1 c. heavy cream
Preparation
    Saute beef filets 4 minutes on each side in butter over medium heat.
    Remove from pan.
    Add shallots and mushrooms.
    Saute until just limp.
    Add brandy.
    Reduce by half.
    Add beef broth and heavy cream.
    Bring to a rolling simmer.
    When cream begins to thicken, about 7 minutes, add the meat.
    Continue to cook for about 8 minutes longer.
    Season to taste.
