Sweet Potato Snowballs - cooking recipe

Ingredients

2 c. mashed sweet potatoes
1/2 c. brown sugar
1/2 tsp. ground cinnamon
1 Tbsp. butter
12 to 15 large marshmallows
1 small bag coconut

Preparation

Drain syrup off sweet potatoes.
Mash potatoes and mix together with sugar, cinnamon and butter.
Cover marshmallows with sweet potato mixture; roll in coconut.
Arrange in buttered baking dish and bake at 450\u00b0 until marshmallows are slightly softened.
