Glorified Egg Shortcake - cooking recipe

Ingredients
    2 Tbsp. butter
    2 Tbsp. flour
    1/2 tsp. salt
    1/8 tsp. pepper
    1 c. milk
    2 tsp. chopped onions or chives
    1 Tbsp. chopped pimento (if desired)
    1/3 c. thinly sliced celery
    1/3 c. cooked or canned green peas
    3 hard-cooked eggs, quartered
    biscuits
    2 to 3 Tbsp. grated American or Cheddar cheese
Preparation
    Melt butter; blend in flour, salt and pepper.
    Cook over low heat, stirring until mixture is smooth; remove from heat.
    Slowly stir in milk.
    Bring to a boil over direct heat, stirring constantly.
    Boil 1 minute.
    Just before serving, stir in the rest of the ingredients, except biscuits and cheese.
    Bring mixture just to a boil.
    Serve over biscuits.
    Sprinkle cheese over top. Makes 2 generous servings.
