New Year'S Good Luck Salad - cooking recipe

Ingredients
    2 (15 oz.) cans black-eyed peas
    2 c. cooked rice (long grain)
    1/2 c. chopped green pepper
    1/2 c. chopped red pepper or pimento
    1/4 c. thin sliced green onions
    3 Tbsp. olive oil
    1/2 tsp. grated lemon peel
    3 Tbsp. vinegar
    1 medium chopped tomato
