Light 'N Fruity Pie - cooking recipe

Ingredients
    1 (3 oz.) pkg. sugar-free gelatin (any flavor)
    2/3 c. boiling water
    1/2 c. cold water
    ice cubes
    3 1/2 c. light Cool Whip, thawed
    1 c. diced fresh fruit (optional)
    1 (9-inch) graham cracker crust
Preparation
    Completely dissolve gelatin in boiling water.
    Combine water and ice cubes to make 1 1/4 cups.
    Add to gelatin, stirring until slightly thickened.
    Remove any unmelted ice.
    Using wire whisk, blend in Cool Whip; beat until smooth.
    Fold in fruit.
    Chill mixture until it will mound, about 15 minutes.
    Spoon into pie crust.
    Chill 2 hours or freeze until smooth.
    Excellent with orange gelatin; tastes like a creamsicle.
