Vegetable Lasagne With Cheese Sauce - cooking recipe

Ingredients
    2 Tbsp. oil
    1 c. chopped onions
    2 large red peppers, chopped
    8 oz. mushrooms, sliced (2 1/2 c.)
    2 cloves garlic, minced
    1 (15 oz.) container Ricotta cheese
    2 c. (8 oz.) shredded Mozzarella cheese
    3/4 c. grated Parmesan cheese, divided
    1 tsp. salt
    1 (10 oz.) pkg. frozen, chopped spinach, thawed and squeezed dry
    Cheese Sauce (recipe follows)
    8 oz. lasagne noodles (9 to 10), cooked and drained
Preparation
    In a large skillet heat oil over medium heat.
    Add onions, red peppers, mushrooms and garlic.
    Cook, stirring, 8 minutes or until tender.
    In large bowl combine Ricotta, Mozzarella, 1/2 cup Parmesan and salt.
    Stir in spinach and vegetables.
