Garlic-Parsley Potatoes - cooking recipe

Ingredients
    3 lb. medium-size red potatoes, unpeeled and sliced
    1/4 c. olive oil
    8 cloves garlic, minced
    1 tsp. salt
    1/2 tsp. freshly ground pepper
    2 Tbsp. chopped parsley, divided
Preparation
    Combine first five ingredients in a large bowl.
    Toss to coat well.
    Layer half of potato mixture in a lightly greased 12 x 8 x 2-inch baking dish.
    Sprinkle half of parsley over potatoes. Layer remaining potato mixture.
    Cover and bake at 350\u00b0 for 45 minutes or until tender.
    Uncover and sprinkle remaining parsley over potatoes.
    Yields 8 servings.
