Low-Fat Crab Enchiladas - cooking recipe

6 oz. imitation crab
6 oz. shredded Jack cheese
1 c. picante sauce
1 c. finely chopped celery
3 oz. light cream cheese
1/2 c. sliced green onions (include tops)
1/2 tsp. garlic powder
8 (1 oz.; 6 or 7-inch) flour tortillas
Preparation

Combine crab, 1/2 ounce of Jack cheese, 1/3 cup picante sauce, celery, cream cheese, onions and garlic powder.
Mix well.
Spoon 1/3 cup of filling onto each tortilla center.
Roll up and lay seam side down in Pam sprayed baking dish.
Spoon remaining picante over top evenly.
Cover with foil and bake in 350\u00b0 oven for 25 to 30 minutes.
Top with remaining Jack cheese.
Makes 4 servings.
