Grandma Elliott'S Lemon Meringue Pie - cooking recipe

Ingredients
    1 1/2 c. sugar
    1/3 c. cornstarch
    1 1/2 c. water
    3 egg yolks, slightly beaten
    3 Tbsp. butter
    1/2 c. lemon juice
    1 Tbsp. grated lemon rind
Preparation
    Mix sugar, cornstarch and water in a saucepan. Stir gradually over medium heat until mixture thickens and boils. Boil for 1 minute. Slowly stir at least 1/2 of the hot mixture into egg yolks; blend into remaining hot mixture and boil for 1 minute longer, stirring constantly. Remove from heat and continue stirring until smooth. Blend in butter, lemon juice and rind. Pour into a baked pie shell and top with meringue.
