Smothered Fried Cabbage - cooking recipe

Ingredients
    1 large green cabbage
    4 slices fat back, scored almost to the rind or bacon
    salt to taste
    2 Tbsp. butter
    1/2 tsp. black pepper
    1 medium onion, chopped
    dash of cayenne pepper or crushed red pepper flakes
    1 lb. smoked ham
Preparation
    Discard outer leaves of cabbage.
    Cut cabbage coarsely; wash and drain.
    Fry fat back in a heavy skillet over medium heat until crisp.
    Remove fat back.
    There should be enough fat in your skillet to fry cabbage; if not, add butter.
    Turn heat up; put cabbage in skillet.
    Cover; lower heat and steam (5 minutes). Remove lid and season with salt, pepper and other ingredients, including the ham.
    Replace lid and cook additional 10 minutes.
