Chicken Rice Medley - cooking recipe

Ingredients
    2 c. water
    1 c. long grain rice
    2 tsp. chicken bouillon
    2 Tbsp. margarine
    1 carrot, diced
    1 celery stalk, diced
    2 scallions, chopped
    1 tsp. salt (optional)
Preparation
    Cook vegetables in margarine; simmer for 5 minutes.
    Add water and bouillon.
    Bring to a boil.
    Stir in salt and rice.
    Cover tightly; turn heat low and let steam for 20 to 25 minutes or until water is absorbed.
    Do not lift lid while rice is cooking.
