Salt Rising Bread(Alabama Tech Extension Service) - cooking recipe

Ingredients
    1 c. sweet milk
    1/4 tsp. salt
    cornmeal
    1/2 c. tepid water
    flour
    4 c. flour
    2 Tbsp. lard
    1/2 tsp. salt
    1 Tbsp. sugar
Preparation
    Scald milk and stir in enough cornmeal to make a batter.
    Add salt.
    (Do this about 3 p.m. in winter and 8 p.m. in summer.)
    At 5 or 6 a.m., add 1/2 cup tepid water and enough flour to make a stiff batter.
    Set in a vessel of warm water and keep at an even temperature.
    Watch carefully and if water forms on top, as it sometimes does, add 1 tablespoon flour.
    Let rise and add 4 cups flour, 2 tablespoons lard, 1/2 teaspoon salt and 1 tablespoon sugar.
    A little warm water may be added, if necessary, to make a soft dough.
    Knead well and put in greased pans to rise.
    This makes 2 small loaves.
    Grease the top when it rises well and bake in a moderate oven at 375\u00b0.
