Biscuits - cooking recipe

Ingredients
    2 c. flour (I use unbleached)
    1/2 tsp. salt
    1/2 tsp. baking soda
    2 tsp. baking powder
    2 tsp. sugar
    3/4 c. skim milk
4 to 5 Tbsp. vinegar (white or cider)
    1/2 c. butter or margarine
Preparation
    Preheat oven to 450\u00b0.
Stir vinegar into milk and set aside. Stir all dry ingredients into flour.
Cut in shortening with fork or pastry cutter until quite fine or looks like cornmeal.
Make a hole in center and pour milk into flour.
    Fold flour into it gently.
    If too dry,
add small amount of milk; gently stir and fold until all flour is moistened.
Scrape from sides of bowl and form into a rounded mass that can turn out onto a thickly floured board.
Very gently, turn and coat with flour; gently push and knead 6 to 8 times.
    Gently pat into 1-inch thickness.
    Cut with biscuit cutter.
Place 1/2-inch apart on cookie sheet.
Re-roll scraps and pat out again to finish cutting.
Bake 10 minutes on rack in middle of oven or 1 notch above.
