Cream Of Broccoli Soup - cooking recipe
Ingredients

4 Tbsp. butter or margarine
2 small onions, chopped
1/2 tsp. salt
1/4 tsp. pepper
3 Tbsp. all-purpose flour
4 c. chicken broth
4 c. milk
2 (10 oz.) pkg. frozen chopped broccoli, thawed and well drained
16 slices American cheese
Preparation

Melt butter in a 6-quart saucepan.
Add onions, salt and pepper. Saute until golden. Add flour, stirring and blending for 2 minutes. Add broth and milk, stirring constantly, until mixture starts to boil. Remove from heat.
Add broccoli and cheese. Return to heat until cheese is melted.
May be made ahead and reheated.
Yields 8 to 10 servings.
